~ Simple Stir-fry Dinner ~

This is a simple stir-fry dinner.
Start by cooking brown rice according to package directions. (1 park water to 2 parts, cook for 30-40 min.)
While the rice is cooking cube 1/2 a block of extra firm tofu. Fry till brown in a little olive oil, then set aside.
Sautee 1/2 onion and 2-3 cloves of garlic. Add carrots, broccoli, zucchini and celery. Once those have started to turn tender add the bell pepper, sugar snap peas and cabbage.
Once all the vegetables are tender add the fried tofu.
Season with teryaki sauce.

Pesto Pizza on Whole Wheat crust

Trader Joes, Whole Wheat Pizza Dough.

Pesto Fixings.

All ready to mix.

Fresh!

Ready for the oven.

Hot and ready to eat.

Dinner!

This is an easy pizza to make. And the left over pesto go great on pasta, sandwiches and even quesadillas. Start with a whole wheat pizza crust. I use the Trader Joes brand. (Makes good bread sticks to0.) Then follow a simple recipe for pesto. Top with fresh mozzarella, cherry tomatoes and onions. Bake according to pizza dough directions. Serve with a simple side salad.

~Easy Pesto~
2 cups firmly packed fresh basil leaves
3/4 cup grated Parmesan cheese
1/4 cup pine nuts (walnuts taste great too)
1/2 cup olive oil
3 cloves of garlic
(I also add salt and pepper to taste)
Mix all ingredients in a food processor till smooth.

Recently bought this book, and I love it! It offers practical advice and simple solutions to providing healthy food for your family. The book was written for busy people (MOMS) who still want to provide what is nutritionally best for their families. I have found the book the be very encouraging in my efforts to provide whole foods to my family. It is written partly as a nutritional text book and partly as a cookbook. I highly recommend checking it out here. Enjoy looking through the pages and hopefully pick up a copy for yourself!

Spaghetti Sauce 101

I made Spaghetti sauce the other night. I think it turned out pretty good and my husband loves it. The best part is that is was super easy.
*Few pounds of tomatoes
*Olive Oil
*1 Onion
*Couple cloves of garlic
*Dash or so of red wine
*A lot of fresh basil
*Dash of sugar
*Salt and pepper

Saute onion, garlic in olive oil, then add the wine.
Once the wine as reduced add the tomatoes.
When the tomatoes have cooked down add finely chopped basil.
Add dash of sugar to cut the acidity of the tomatoes.
Season to taste with salt and pepper.

Note: This sauce froze really well.

Easy Dinner

Baby potatoes mixed with olive oil, salt and pepper.
Bake at 400 till tender.

Firm tofu, cut in thick slices.

Tofu frying with a little olive oil and teriyaki sauce.

Fresh baby broccoli. Steam lightly.

Easy, quick, healthy dinner!

Beet Burgers

My Mom created these patties after eating the veggie burger at Rutherford Grill in the Napa Valley. If you're afraid that you won't like them because of the beets, think again. You can't taste them!!! They just give the burger an amazing red color!

Ingredients:

2 Beats – Grated

1 Cup brown rice

1 Cup raw rolled oats

¼ Cup dried minced onions

½ -1 Cup finely chopped walnuts

Salt

Braggs Liquid Aminos

BBQ Sauce

Add grated beats to rice and cook according to package instructions (2 cups of water for every cup of rice).

Soak oats in HOT water – enough to cover oats

Add minced onions

Once rice is cooked, add chopped walnuts to oat mixture.

Add rice/beats to oats. Mix.

Flavor with Braggs Liquid Aminos (appox 2 table spoons) and BBQ Sauce (approx ¼ cup) Add salt if needed.

Form in to patty shapes and fry in skillet with olive oil.

*Note: If the mixture is too loose and not holding a patty shape add a few sprinkles of flower till it reached the right texture.

New Years Resolutions...What was I thinking!?!?!?

The start of another year brings new years resolutions. Each year they always look the same for me. Exercise more, eat healthy, work out, don’t eat fat, don’t eat sugar, go to the gym everyday, and the list goes on until it starts repeating its self.

Well this year I thought I’d take a little different approach. This year as a mother and care taker of my family I thought I’d make a new years resolution one that would benefit them as well. So on January 1, 2010 I posted this as my Facebook status update:

New Years Resolution: To cook more things from scratch, and use as little processed food as possible. No more frozen pizza or box mac-n-cheese.

Uh-oh…what have I just signed up to do? I like to cook, but I don’t. I like eating healthy, but I don’t. I like fresh produce and fruit, but all that takes time. What do I like? I like quick convenient dinners. I like meals that take no thought. I like the food to just appear on the table with out any effort from me. But this year, this year with a new years resolution to keep, I will be putting effort into the things I cook. I will be thoughtful about the type of ingredients I use. And hopefully in the end I my family and will reap the rewards of knowing we have put only what’s best into our bodies.

Now Rome wasn’t built in a day and I know myself well enough that if I throw away all my mac-n-cheese, taquitos and burger buns I would also throw in the towel and call it quits after one meal. So I’m starting slow. I have visions of entirely home cooked meals. Home made bread, fresh fruit juice and a steaming casserole straight from the oven. But until then it will be baby steps for me. I need to get me feet wet first, and see how I do at this whole cooking thing. I consider these baby steps the building blocks of Rome.

So here’s to 2010, a year of creating meals naturally, using whole foods and learning how to cook in a whole new way.

Maddie has been up to more and more stuff that is so hard to capture on camera. She claps now! It is the cutest thing! She is also pulling her self up on everything. The best thing is the toy basket because she picks out her toys. The worst is the TV because she pulls the cords. She also a pro at scootching/army crawling. The cats have learned to stay on the "safe" side of the safety gates!

While I know I've been terrible at keeping this blog updated, I'm going to do better. Maddie has been growing like a weed and I can hardly keep up with her, much less the blog. :) More pictures will be coming in the very near future, but there are some things even the camera can't capture.

She now has two bottom teeth. They are so cute when she laughs. I've tried and tried to get pictures of them, but they're sneaky little things!
She's learning to crawl! Through right now she only places her head on the floor, butt up in the air, feet on the ground...imagine baby yoga pose. Then she pushes with her feet, while her head is still on the ground. I swear she's going to end up with rug burns on her forehead! But at least she's moving forward, which is a lot less frustrating than scooting backwards.
She loves to scream at the cats.
Thinks meal time is the best ever!
Hates having her diaper changed. Well, not hates, but would much rather be rolling around naked.
Knows how to make "fishy lips".
Is learning to nap like pro. Lately, we've been getting two, two hour naps a day.
Her doctor says that she's advanced for her age. At her six month check up the Dr. said she behaves much more like a nine month old. Needless to say, we were proud!

My Mom's a Slacker...

Hi Everybody,

My mommy been really "busy" lately and hasn't had time to put up any new pictures of me. She has hundreds of of them on the camera but hasn't had the time to go through them and find the ones cute enough to post. I think they're all cute, because I'm in most of them, I'm kind of a big deal around here. So, just because my Mom can't get her act together, doesn't mean that you have to miss out on what I've been up to. I'll fill you in.

I'm now eating big people food twice a day. Though it's not a good as Mommy's milk, it is fun to play with and I always try to make as big of a mess as possible. So far my favorite has been sweet potato, but they made my tummy sick, so mom gave me some yummy, sweet, prunes!

I can sit up totally on my own. The only problem with sitting up is my toys roll (or I throw them) far way and pretty soon I'm left sitting with nothing to play with.

I can roll over anytime I want. Though when I do, I end up on my tummy and I don't like being on my tummy. I'll have to figure out how to get back on my back. Right now I just scream till Mom or Dad comes and gets me.

I'm enjoying my Christmas presents. Grandma and Grandpa got me a "jungle." It sings and balls roll all around. I love making the music start. Santa brought me a swing. Mom and I swing everyday (and Dad too, when he doesn't have to see patients). I love to laugh and giggle every time it goes high.

I also working on some teeth. They don't feel very good right now, so I make sure I always have something in my mouth. My favorite thing to chew on is big carrot right from the fridge. If I don't have one of those, then I'll chew on just about anything, lately it's been Mom or Dad's sweatshirt strings.

I'll have a talk with my Mom and make sure she puts up pictures soon. Don't worry, I look the same, just more cute.

This past week I found a steal of a deal on craigslist.com. This Jeep stroller, which retails at around $200 was for sale for only $75!!!! Plus my dad was here and able to pick it up for us. THANKS Dad!!!

NOTE: While I am in support of Prop 8 I want to be VERY clear that this has nothing to do with gays. While I may not agree with their lifestyle, I beleive that, as consenting adults, you can make what ever choices you want. I am voting YES on 8 to perserve my religous freedom and keep the goverment out of my church. Below is an article that gives some further reasons to vote YES on 8.

13 Civil & Religious Reasons to Vote YES on 8!
Civil Reasons

1. Scholars recognize that marriage is the fundamental and universal human institution. To call homosexual relationships 'marriage' will be to sweep aside what civilization has understood as a marriage since the dawn of history and call the history and heritage of American family a mistake.

2. Without exception, our founding fathers such as George Washington, Benjamin Franklin, and Thomas Jefferson believed certain truths are 'self evident.' Among those self evident truths was the belief that marriage was defined and designed by nature for one man with one woman.

3. Yes on Proposition 8 protects our children from being taught in public schools that 'same-sex marriage' is the same as traditional marriage.

4. Same sex couples already enjoy legal rights of domestic partnership, etc. We do not need to surrender the definition of 'marriage' to vindicate these relationships. Proposition 8 does not deprive domestic partnerships of any of their rights.

5. Proposition 8 opponents argue that 'Homosexuals are a minority that should not be discriminated against.' On close analysis, the idea that gays should receive the status of a 'minority group' is patently absurd. They are not a racial or ethnic group. The gay rights movement is nothing other than a powerful special interest lobby masquerading as a 'minority' and applying its money and political clout to 'muscle in on' the special status and entitlements properly reserved for the truly disadvantaged. If homosexuals are recognized as a minority group, the identical arguments could also be applied to classify polygamists or pedophiles as oppressed minorities.

6. The same arguments put forward to justify same sex marriages can logically be used to legalize polygamy and lower the age of consent.

7. Unless we vote Yes on Proposition 8 our religious liberties are at risk. To better understand the threats to religious liberty see the following articles by Alan J. Reinach, Esq.

8. The most devastating effect of same sex marriage will be the destruction of marriage and family the way we know it. Redefining marriage will cause profound confusion to our children. ' Where will it stop!?

9. The California Supreme Court's decision changing the definition of marriage is profoundly undemocratic. 61% of Californians voted to retain the definition of marriage as recently as 2000.

Religious Reasons

We should Vote Yes on Proposition 8 because we love God and our fellow man. If we love Jesus we will not vote in support of sin. Sin is what nailed Jesus to the cross. If we love our fellow man we will not cast a vote that will directly widen the road to destruction.

10. Seventh-day Adventists have always believed there is a distinction between the first four and last six of the Ten Commandments. The first four commandments are religious in nature and governments should not make laws that dictate what god to worship, or when and how to worship him. Conversely, the last six commandments are civil in nature. Adventists have always supported laws that protect parental rights, life, truth, property, and family as found on the second table of the Decalogue.

11. Marriage is one of the 28 fundamental beliefs of the Seventh-day Adventist church. Click here to read belief number 23 on Marriage and the Family. 12. Adventists have a prophetic calling to champion the law of God. If we fail to uphold marriage we compromise our moral authority to defend the Sabbath.

13. Ellen G. White supported voting in support of moral issues.

'How can Christian men and women tolerate this evil?… There is a cause for the moral paralysis upon society. Our laws sustain an evil which is sapping their very foundations. Many deplore the wrongs which they know exist, but consider themselves free from all responsibility in the matter. This cannot be. Every individual exerts an influence in society. In our favored land, every voter has some voice in determining what laws shall control the nation.

So sorry guys, I've dropped the ball and didn't get any 9 week pictures taken. Madelynn had on the cutiest outfit this morning and I was planning on taking pictures. But we ran out the door to run errands, pick up Tami at the airport and eat dinner. Next thing I knew Madelynn had filled her diaper and her cute outfit. But I will be posting more pictures of our trip to Visalia with the cousins.
